Chicken Pasta Salad


Pasta salads shouldn't be a complicated dish to make. I've seen some pasta recipes out there that have some interesting ingredients. I like to keep it simple and practical. It's an added stress to make sure I buy those special ingredients that I normally don't ever use, rather than being able to throw together a pasta salad on the whim because all of its ingredients are already sitting there in my fridge or pantry.

So I threw this together for supper tonight and wanted to keep the recipe - it was good stuff! We left the onions out of the kids portion and I, very lazily, refrained from cutting up the olives but it was kinda fun running into a whole olive every now and then as I ate this meal.

Here's the recipe:

Chicken Pasta Salad


1 bag (gluten free) pasta
1/2 cup mayonnaise
1/2 cup pesto
1/2 tsp sea salt
some pepper
1 cup peas, thawed
1/2 red pepper, chopped
1 can black olives
1/4 cup red onion, thinly sliced
1 cup of chicken (I used the chicken from our meat stock)
or meat of some other kind: sliced sandwich meat or pepperoni

1. Cook the pasta and rinse with cold water.
2. Place the pasta in a large bowl and add all the other ingredients to the pasta.
3. Stir, serve, eat and enjoy!

  1. I'm wondering where you get your pesto. Do you buy it, or make it in bulk during harvest season? I have looked at pesto recipes, but it seems they get quite expensive after buying pine nuts. Thanks!

  2. Hi Erin!

    I usually make my own pesto. Super cheap and easy way is to use dried (rehydrated) Basil and use sunflower seeds instead of pine nuts. It's not as good as fresh basil and pine nuts but still delicious enough!!

    Recipe would be something like:

    1/2 cup dried basil soaked in just enough hot water to cover the basil. Soaked for 5 minutes and drained.

    1/4 cup sunflower seeds

    1/4 cup parm cheese (or, instead, add more sunflower seeds)

    1/2 clove garlic, chopped

    1/4+ tsp sea salt

    squeeze of lemon

    1 - 2 T. olive oil

    Place ingredients in container and blend with handheld blender until you get the consistency you like.

    And it's ready for sandwiches, pizzas, pasta salads, etc.

    So yummy!!
