Heavenly Custard Dessert


Desserts and treats can use the most simple of ingredients and yet still taste heavenly! This is one of those desserts and it shouldn't be overlooked for its simplicity - trust me (nor should it be overlooked for a very poor, not very appetizing looking photo). It's light and fluffy and ever so smooth in texture and has the perfect amount of sweetness. AND it's so incredibly quick and easy to make.

It's amazing to think of how nutrient dense this dessert is: the egg yolks are packed in protein, essential fatty acids, folate (folic acid), vitamins and minerals and the fruit placed on top of this delicious custard adds to its nutrients. 

I love, love, love seeing my kids lick their spoons and bowls when they have this treat ... look in the other corner of the room and you'll find me doing the same thing.

Here's the recipe:

Custard Dessert
(enough for about 6 small servings)

6 egg yolks (cage free, hormone free, etc. etc.)
3 tsps raw (runny) honey, (1/2 tsp raw honey for each yolk)
Berries (raspberries, strawberries, blueberries, cherries, etc.)

How to make:

Separate the egg yolks from the egg whites.

Place the egg yolks in a blender using the wire whisk attachments.

Beat the eggs until they become lighter in color and fairly fluffy (about 5 minutes).

Add the honey and beat an additional 3-4 minutes.

Spoon the custard into a small bowl. Plop some berries on top and enjoy!
