Easy Chicken Noodle Soup


My son has been craving chicken noodle soup. I made some last night - as a last minute ditch effort to at least put a meal of some kind on the table (after a crazy busy day) at some point in the evening (never mind that it was 9:00 by the time we sat down to eat!) and the kids loved it.

Were they just super hungry? Or was the soup really that good? ... I'd like to think it was the latter. :)

Here's the recipe:

10 cups (or so) water
chicken - whatever kind you have on hand, chicken with bones makes for a more nutritious soup
3 stalks celery, whole
2 large carrots, whole
1/2 onion, whole
pepper

2 tsp. sea salt - to be added later
bag of gf linguine - to be added later
1 T. parsely (dried or fresh)

1. Throw first 6 ingredients into a pot. Let it come to a boil. Turn it down to a simmer, cover with lid and allow to simmer for an hour or more. Add more water if necessary.

2. After chicken is thoroughly cooked, turn off unit. Spoon out everything from broth.

3. Chop up chicken and carrots and return to broth.

4. Add  sea salt and the parsley.

5. Break linguine into chicken soup sized pasta and toss into pot. Add more water if necessary.

6. Boil until linguine is done and enjoy!

You can make it more nutritious by adding other veggies to it or adding egg yolks after its done cooking.

  1. Claudia, one more thing. I can't tell by your posts, but are you completely healed? I know Tif Aune, and she pointed me to your blog a while back. I did the GAPS diet for a year. It gave me some major problems. I don't know if something WENT wrong, or if it was just wrong for my body. But anyway, I'm still trying to pick up those pieces, but I am still worse off. It seemed to be good for my family, though no one is truly healed after a year (actually after going off, everyone seemed to regress).

    Anyway, the new thing I am doing is MMS Autism protocol by Kerri Rivera. I thought I'd just point you in that direction, and you can research it. It turns out I have parasites!!! So crazy. I've never even been outside the US. Is parasites something you have looked into? I started MMS, and it seemed to help, so I thought what the heck, and did the MMS enema, and the next day I had about 6 dead parasites come out. One of them was like 8 inches long. Every time I do an MMS enema (daily), I have at least 3 come out. I am disgusted, but wanted to point you that way. I put so much time and money into healing my gut. But I don't think it's very possible to heal the bacteria until you get the bigger organisms out of there first. We are still at the beginning of this protocol, so I can't say for sure how it will work, but I wanted to bring it to your attention. I do so much love your blog and recipes. Thank you!

  2. Erin - thanks for sharing your experience with me about the GAPS diet. I've heard about other people who have similar experiences. Makes me wonder why?? Inherent weaknesses? Toxic overload? I wonder...

    At this point, I believe that everyone should do a yearly parasite cleanse. It's so easy to get parasites from a variety of places/foods. I agree with Dr. Klinghardt's past opinions that those who have less parasites live longer and healthier lives.

    I believe that cleansing the body of parasites is a great way to regain health. If you're still struggling after getting rid of those nasty critters, cleanse the liver next. I do Andreas Moritz's method from his book, "The Liver and Gallbladder Miracle Cleanse".

    Lastly, am I completely healed? No. I have Lyme disease. One of the trickiest and most complicated diseases out there. But am I making progress? You bet. Do I feel that the GAPS diet helped? Definitely. Our gut makes up 70% of our bodies defense system against pathogens - need to heal that for sure and GAPS helped us do just that.

    We're still experimenting - still have a ways to go but, just like you, are learning the whole way and finding what works for our bodies.
