Oh this salad is so delicious - we could eat it every day! My husband said this salad was, "fantastically delicious"- I must agree! Not only is it such a delight to eat but every ingredient within it is nourishing to the cell and the body which makes this salad all the more delightful.
Here's the recipe:
Sweet Strawberry Salad
(enough for about 5 servings)
1 1/2 heads of romaine lettuce, chopped into thin strips
Couple large handfuls of spinach, chopped into thin strips
5-6 large, fresh, ripe strawberries, halved and sliced into small pieces
1/2 cup sliced almonds
Dressing:
1 1/2 tsps raw honey
1 1/2 tsps grapeseed or coconut oil
1 1/2 tsps lemon juice
1. Toss together the first 4 ingredients in a large bowl.
2. In a small cereal bowl, mix together the remaining ingredients.
3. Pour the dressing over the salad and toss together.
I'm thinking about changing up this recipe every now and then by adding either some tangerines or poppy seeds.
What a simple and delightful salad ... oh, how I love food!!!
