Recipe: Jam Substitute

Almond bread can be used for a sandwich or simply slathered with some butter. But it is kinda nice to spread something sweet over the top of it. Here's an idea that we're liking a lot:

Jam Substitute

2 cups frozen berries, thawed
1 T. fruit sugar or 1 T. raw honey

Mash the berries. Mix in the fruit sugar and store in the fridge for a week or more. This jam can be spread on any bread, pancakes or muffins.

Being on the GAPS diet, I go easy even with natural sugars. Almond breads, or any bread for that matter, only need a small spread of sweetness to make the meal a bit more delightful.
