This recipe is was passed down to me from a good friend of mine (thanks Jessica!). Once blended it makes refried beans and we also use it to make chili - both of which are excellent recipes!!
Here's the recipe:
Basic Bean Recipe
1 lb. bag pinto beans (two cups)
one onion, chopped
1/4 tsp cumin
1/2 to 1 jalapeno pepper, chopped
3-4 tsp.'s sea salt
3-4 cloves garlic, chopped
1. Place beans in crock pot and cover with enough water that it just covers the beans.
2. Stir in the rest of the ingredients.
3. Allow to cook at medium heat for 6-8 hours. Or until beans or done.
After the beans cool down a bit, either: place in blender or use a handheld blender to blend up the beans to a consistency you like.
This creates delicious refried beans that can be refrigerated for atleast a couple of weeks and can be used to spread onto: burritos, quessadillas, tacos, used for layered dips or used as a base for a bean soup!
