Recipe: Spice Muffins
This is a great (non-sourdough) version of the spice muffins. We just made them this morning!
Here's the recipe:
Spice Muffins
dry ingredients:
2 1/2 cups whole wheat flour
3/4 cup sucanat
1 tsp cinnamon
1/2 tsp ground cloves
1/4 tsp nutmeg
1/2 tsp salt
3/4 tsp baking powder
1/2 tsp baking soda
wet ingredients:
1 cup milk
2 eggs
1 tsp vanilla
1/2 cup coconut oil (or butter) melted
crumb topping:
1/3 cup oatmeal
1/3 cup flour
1 (heaping)Tbsp honey
1/4 tsp cinnamon
2/3 tbsp melted butter
(Preheat oven to 350°)
1. Mix all of the dry ingredients together in a medium sized bowl.
2. Create a well in the center of the dry ingredients. Pour all of wet ingredients into the center and mix all of the ingredients together.
3. Use a bit more milk if you can see that it is necessary.
4. Fill cupcake liners 3/4 of the way full.
5. Stir together the ingredients for the crumb topping and sprinkle on top of muffins.
6. Bake for 16-18 minutes or until toothpick/fork inserted comes out clean.
