Recipe: Taco Soup

Taco soup is a recipe we come back to now and then and is worth recording on this blog. I've begun making homemade V8 juice (which it calls for) leaving me feeling more at ease than I otherwise would if I were to buy the canned kind.

Here's the recipe:

Taco Soup

1/2 lb ground turkey or beef
1/4 onion, chopped
3 cups corn
1 can kidney beans
1 can pinto beans
8 cups "V8" juice
taco seasoning (enough for 1 lb. of meat)
Sea salt

1. Brown onion and meat in a skillet. (Add extra beans if making it a meatless taco soup.)
2. Meanwhile, in a pot, stir together the corn, beans, V8 Juice and taco seasoning. Bring to a simmer and keep it there until everything is thoroughly warmed.
3. Add the meat to the soup mixture and sprinkle with a few dashes of salt.

Place in bowls and, if desired, add some grated cheese and a small dollop of sour cream on top.

Eat with tortilla chips or with a side of corn bread.
