Homemade V8 Juice
(makes roughly 8-10 cups of juice)
12 tomatoes (or use three cans of tomato sauce)
3 large carrots
3 celery stalks
1/4 onion
1/8 bunch fresh parsley
(or add 2 tbsps dried parsley after juicing)
Juice all of the ingredients with a juicer.
Here's what you can do with this juice:
a) drink as a fresh veggie juice.
b) use it in soups, such as taco soup, or other recipes calling for V8 juice.
c) freeze in glass jars for future use
d) can the juice by bringing the juice to a simmer (not boiling) and placing the juice in glass jars, along with one tbsp of lemon juice and can the juice according to canning directions.
