Recipe: Cheesy-Nutritious Quessadilla's

Even though these Quessadilla's are missing the cheese they're still delicious and definitely worth trying.

The filling contains a bit of miso which is a nutritious fermented soybean paste that contains microflora beneficial to having a healthy digestive system. It also contains some tahini which is a very nutritious sesame seed paste.

Nutritional yeast is another beneficial ingredient within this recipe. Nutritional yeast is a deactivated yeast that is so packed with certain nutrients that one heaping tablespoon will stock you up with a couple days worth of thiamin, riboflavin, niacin, B6 and B12 and provides a generous amount of folic acid as well.

Here's the recipe:

Cheesy (Dairy Free) Quessadilla's

2 cups cooked chickpeas (garbanzo beans)
3 tbsp.'s nutritional yeast
2 cloves garlic
2 tbsp.'s tahini
1 tsp apple cider vinegar
2 tbsp.'s miso
1 tsp onion powder
1 tsp sea salt
1 1/2 tsp.'s paprika
1/2 tsp dried mustard

1. Process all of these ingredients in a food processor (a blender may work too.) until smooth.
2. Spread some onto a tortilla and place another tortilla on top.
3. Place in a lightly greased pan and fry on medium heat for a couple of minutes on each side.

For added flavor or heartiness add some sliced red onions and/or cooked quinoa or brown rice onto the cheesy mixture before cooking - super yummy!

These can be served with some salsa or a side of mashed avocados mixed with chopped red onions, chopped tomatoes and a sprinkling of sea salt.
