Recipe: Barley and Lentil Soup

This is a hearty soup that has excellent flavor and is so easy to make. It's a bit spicy (not too spicy) but the spicyness can be toned down by cutting the amount of the chili powder in half for those who don't like a touch of heat.

This soup contains lentils which are high in fiber, high in six minerals, B-vitamins, protein, folate (folic acid) and iron. It also contains barley which is also a great source of fiber and contains high levels of some important minerals as well.

Here's the great recipe:

Barley and Lentil Soup

11 cups water
3/4 cup red lentils
3/4 cup brown lentils
3/4 cup barley
1 15 oz can organic tomato sauce
1 onion, chopped
2 cloves garlic, mashed and chopped
3 tomatoes, chopped
2 tbsps chili powder
1 tbsp sea salt
1 tbsp dried basil
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp oregano powder

1. Place all ingredients in a large pot and bring to a boil.
2. Turn down heat to a medium-low setting and allow to simmer for 40-45 minutes.

We enjoyed this soup with a side of garlic bread and a small bowl of kale salad.
