Recipe: Whole Foods Salad

This salad is my latest favorite. SO yummy!

Here's the recipe:

Whole Foods Salad

Spring lettuce mix
Iceberg lettuce
Quinoa, cooked and cooled
Peas, fresh or thawed
Beets, sliced into thin wedges
Olives, sliced
Carrots, chopped
Red onion, thinly sliced
Tomatoes, sliced into wedges
Turkey or Chicken (optional)
Salt (or use kelp-salt)
Walnuts, chopped

Layer these ingredients into a bowl. Sprinkling with salt along the way.

Generously drizzle some E.V. olive oil over the salad, drop some walnuts on top, sprinkle a couple more dashes of salt and enjoy!

*Because I've been making this salad one or more times a week, I like to make it a little easier and less time consuming by pre-slicing the beets and keeping them in a jar in the fridge.
