Recipe: Tomato Basil Pasta

This is a meal we had today that we really, really enjoyed.

Here's the recipe:

Tomato Basil Pasta

Pasta of choice
2 tsp.'s dried basil
3 cloves garlic, sliced
3/4 tsp sea salt

Boil water. Add pasta and all other ingredients into boiling water. Boil until pasta is done. Strain pasta.

In the meantime cook the following:

Ground meat (or meat substitute) of choice
Dried basil
Sea salt
One yellow squash, chopped
2 cloves garlic, chopped
1/2 - 3/4 onion, chopped
1 can (16 oz) organic chopped tomatoes
(or use garden fresh, peeled tomatoes)
dried oregano
Few pinches of stevia
(or other sugar of choice)

Place meat in large pan. Add a few generous pinches of basil and a few dashes of salt. Fry until partially browned.

Add in squash, garlic and onion. Fry for 5-8 more minutes or until vegetables are tender and meat is thoroughly cooked.

Add in:

Tomatoes
1 tsp dried basil
3/4 tsp dried oregano
1/2 tsp sea salt
Few pinches of stevia powder

Cook until warmed.

Spoon meat mixture onto individual pasta servings and eat!

*Peel tomatoes by placing tomatoes in boiling water for 10-15 seconds. Allow to cool and peel off skin.
