Recipe: (Coconut Flour) Berry Muffins

This is a gluten free, grain free, sugar free, yum-ee muffin recipe.

Here's the recipe:

(Coconut Flour) Berry Muffins
(makes 6 muffins)

3 eggs, cage and hormone free
3 Tbsps butter, melted
1/4 tsp stevia powder
1/4 tsp sea salt
1/8 tsp almond extract
1/4 cup sifted coconut flour
1/4 tsp baking powder
3/4 to 1 cup fresh raspberries or blackberries or blueberries

Pre-heat oven to 400°.

Blend eggs, butter stevia, salt and almond extract.

Thoroughly mix coconut flour and baking powder into batter, until there are no lumps.

Place batter into 6 muffin liners. Bake at 400° for 16-18 minutes.

*Nuts can be added to this recipe too!
