Recipe: Basic Gluten Free Muffin Recipe

I never thought I'd be one of those people that can't eat wheat and look for the foods that say, "gluten free". I still have hope. My body needs to heal and that will take time.

But for now, I've finally accepted that, whether I like it or not, this is my situation and so in order to add some flavor to my every day diet I've decided to add some gluten free breads into my diet.

I still have a family that's able to eat any grain they like so I'll still be posting whole grain recipes in the future as well.

For now, here's another "gluten free, yumm-ee" muffin recipe - I made this one up on the whim and really liked what came of it.

Here's the recipe:

Basic Gluten Free Muffin Recipe

1 egg
1/2 tsp sea salt
1/4 tsp stevia powder
1/3 cup coconut milk
2 Tbsp water
3 Tbsp coconut oil
1/2 tsp vanilla (optional)

1/2 tsp baking powder
1/4 cup potato starch
1/3 cup brown rice flour
1/4 cup almond "flour"

Pre-heat oven to 400°.

Mix first seven ingredients together until well mixed.

Mix next four ingredients into mixture.

Place in muffin liners. Bake at 400° for 16-17 minutes.

*Add fresh berries or nuts of choice into the batter before baking for added flavor or texture.

  1. These look yummy! My son and daughter are gluten free and I'm slowly realizing (sadly) that I don't handle it well at all...even sourdough :( Ate some today and have really paid for it already. It's always nice to have some good tasting gluten free options...it is easy to miss the bread and baked goods!

  2. Kami - I miss those breads too. I'll be posting more gluten free recipes in the future. I have to be really careful with the sourdough breads. I've come to the conclusion that sourdough is the kind of bread that we should have been eating our whole life but once digestion becomes impaired a break needs to be taken from hard to digest foods (including grains whether their soaked, sprouted or naturally leavened).

    It's a long journey - there are so many of us who suffer with digestive problems but I have hope that we'll figure out how to beat this!
