Recipe: Vanilla Coconut Ice Cream

This is my favorite ice cream recipe so far.

I looked at many different raw ice cream recipes and pulled the ingredients together to make a recipe I thought we'd like.

And we do. We love it.

Here it is:

Vanilla Coconut Ice Cream

5 dates and 5 dried apricots
2 cups cashews
1 and 3/4 cups water
about 1/4 cup agave
1 can Thai brand coconut milk
2-3 tsps real vanilla
small sprinkle of sea salt

Soak the dates and apricots overnight in about 1 cup of filtered water. Soak the cashews overnight in filtered water in a separate bowl.

Pour the water out of the cashews. Place the cashews and 2 cups of fresh water in a blender until nice and creamy. Add the soaked dates and apricots (along with the water they soaked in). Blend in the coconut milk and vanilla. Add agave to desired taste. (You might want to make it a little sweeter than you think you might want it. Once it becomes ice cream the sweetness goes away some.)

Place in home made ice cream maker of your choice or just try sticking it in your freezer. You might have to stir it up to soften the consistency of it after freezing it like this.

It usually doesn't harden up like normal store bought ice cream. But instead resembles a soft serve ice cream.

Top with anything you like.

Nuts, berries, chocolate syrup.

(You can make your own chocolate syrup by mixing together 1 tsp real cocoa {a superfood}, 2 tbsp coconut oil, a little real vanilla and 3 tbsp agave. Pour the desired amount over your scrumptious ice cream.)

So good. So healthy!

And it's ice cream!
