Recipe: Cranberry Spinach Salad

Simple recipe.

But still quite tasty.

Spinach is loaded with:

calcium
folic acid
vitamin K
iron
vitamin C
fiber
magnesium
vitamin A

(Buy organic if you can.)

Cranberry Spinach Salad:

Small leaf spinach
Gala apple, cut into small pieces
Dried Cranberries
Sliced almonds

Add the desired amount of any of these ingredients. Toss together. Pour a little of some Honey Dijon dressing on top. You can make your own Honey Dijon dressing. Simply throw these ingredients together:

2 tablespoons dijon mustard
2 tablespoons honey
a few dashes of soy sauce
a quarter cup of olive oil
a tablespoon or two of vinegar
a pinch of salt

Very good. Very healthy.

Another way I like to eat spinach is to simply squeeze some lemon juice over the top some washed spinach and eat it just like that.

Spinach is also marvelous for throwing into smoothies.
