We used our cereal/granola to create a delicious side dish. Really, it's a dessert. I'm just trying to keep the kids happy and feeling like this diet thing isn't going to be all that bad. So far, it's working!
Here's the recipe:
Ingredients:
1 can coconut milk
10+ fresh strawberries (or frozen & thawed)
3/4 dropperful of liquid stevia (we used pomegranate flavored)
Blend up ingredients in blender or food processor.
Place strawberry coconut mixture into bowls and sprinkle cereal on top.
Just for quick reference -
Cereal ingredients are:
2 cups almonds (soaked and dehydrated)
1 cup sunflower seeds (soaked and dehydrated)
1/2 cup coconut flakes
1/8 cup raisins
5 T. brown or golden flax seed meal
(use coffee grinder)
1 tsp alcohol free vanilla
Process/blend almonds until they break up. Add rest of ingredients and blend or process until you get the texture you want.
