Sweet Peppermint Salad

My family and I are friends with a wonderful elderly woman whom I admire much. On our way home from running an errand the other day we saw her picking weeds in her front yard. In the past we discussed helping her with her yard work and seeing her out there gave us that perfect opportunity.

As we picked and pulled away she gladly shared some of her peppermint plants with us and told me about a salad recipe that her mother used to make. This recipe, she explained, due to family members who had their own restaurants, ended up on the menu of couple of restaurants!

This salad contains very simple ingredients, all of which we happened to have, so first thing upon coming home, I threw this little salad together and, oh my, it was very good! The mixture of the peppermint, fresh lettuce, sweet honey and mouth watering vinegar makes this quite the refreshing salad! We loved it. I hope you do too!

Here's the recipe:

Sweet Peppermint Salad

1 head romaine (or other) lettuce
12-14 peppermint leaves
2 green onions, chopped
1 T. water
1 tsp vinegar (of your choosing - we used apple cider vinegar)
1 1/2 tsp.'s raw honey
sea salt, dash
pepper, dash

How to make:

1. Chop up lettuce and peppermint into thin little strips and place in a medium sized bowl.

2. Throw in the chopped green onions.

3. In a small bowl, mix together the rest of the ingredients: water, vinegar, honey, salt and pepper.

4. Drizzle all of the wet mixture onto the salad and toss together.

5. Add a couple slices of tomato and enjoy!
