Here's another GAPS friendly treat ... I think next time I'll see how they do in cookie form.
Here's the recipe:
Apple Spice Almond Muffins
(makes about 20 muffins)
3 cups almond flour
4 eggs
3 T. coconut oil
1 sweet apple, chopped
1/4 tsp. sea salt
1/2 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. cloves
1/4 tsp. nutmeg
1/2 tsp baking powder
1/4 cup yogurt or kefir mixed with 1/4 cup water
Preheat oven to 350 degrees.
1. Mix all ingredients in blender until liquid.
2. Pour in muffin liners.
3. Bake for 16-18 minutes or until tops are cooked.
