Recipe: Vegetable Millet Soup

The millet in this soup reminded me a lot of the taste and texture of white rice has when used in soup. This soup was a success in that it was delicious, filling, healthy and easy to make. I'm sure we'll be making this recipe many times to come.

Here's the recipe:

Vegetable Millet Soup

2 cups Millet
4 cups chicken or vegetable broth
10 cups filtered water
2 tsps salt
pepper, couple dashes
2 large carrots, chopped
3 red potatoes, chopped
3 cloves garlic, mashed and chopped
1/2 onion, chopped

1 1/2 Tbsp dried parsley
1/4 tsp onion powder
1/8 tsp garlic powder

1. Place all of the first 9 ingredients into a pot and bring to a boil.
2. Lower heat, bringing soup to a mild simmer and simmer for 20 to 30 minutes or until potatoes are cooked.
3. Turn off burner and stir in the parsley, onion powder and garlic powder.

Serve and enjoy!

This soup would be great with a salad and a slice of buttered bread on the side!
