Recipe: Cheesy Broccoli and Brown Rice Soup (dairy free)

If, for whatever reason, you're trying to eat less dairy this is a great recipe that still has a cheesy taste but doesn't contain any dairy.

Here's the recipe:

Cheesy Broccoli and Brown Rice Soup

1 1/2 cups brown rice, cooked

Cheesy Sauce:

1 cup water
1 garlic clove, chopped
2 Tbsps Tahini
4 Tbsps brown rice flour
(or use 3 Tbsps corn starch or arrowroot powder)
1/4 cup nutritional yeast
1/8 tsp mustard powder
1 tsp onion powder
1/2 tsp sea salt
3/4 tsp paprika

1/2 onion, chopped
2 garlic cloves, chopped
1/4 red bell pepper, chopped
3 Tbsp coconut oil

1 tsp sea salt
8 cups filtered water
2 broccoli crowns, chopped some
broccoli stems, peeled and chopped

1. Cook the rice. Set aside.

2. Make cheesy sauce by combining Cheesy Sauce ingredients in a blender or food processor. Set aside.

3. Combine onion, garlic, bell pepper, and coconut oil in a pot and fry on medium heat for 3-4 minutes.

4. Stir in the salt, broccoli, broccoli stems and water. Bring to a boil. Cover with a lid and allow to simmer for 5-7 minutes.

5. Add in the cheesy sauce and the rice. Allow to simmer an additional 3-5 minutes or until soup becomes mildly thick.
