Recipe: Vegetable Pasta Casserole

This is a tasty and filling meal, loaded with vegetables. It makes enough for a large family and works very nicely as a crock pot meal.

Here's the recipe:

Vegetable Pasta Casserole

16 oz whole wheat pasta, short

1 large onion, chopped
1-2 large carrots, chopped
8 oz can of green beans
1 cup peas, thawed
5 cups water
1/2 cup whole wheat flour
1/4 cup parsley
2 tsps dried thyme
2 tsps dried paprika
2 tsps sea salt
pepper to taste

1. Whisk the flour into the water.
2. Place all ingredients, besides the pasta, in crock pot. Stir together.
3. Cook on medium heat for 6-8 hours.
4. One hour before cooking time is done add the pasta.

Serve and enjoy!

* Add some beans of your choice such as kidney, black or cannellini beans to the recipe for additional protein, minerals and fiber.
