Recipe: Raspberry-Kiwi Dessert

This dessert is filled with raw fruits that sit atop a dense crust and it's all topped with a spoonful of delicious coconut manna.

Here's the recipe:

Raspberry-Kiwi Dessert

For crust:

1/2 cup walnuts
1/4 cup raisins
1/2 cup coconut flakes
1/2 cup flax seeds
pinch of sea salt
1/4 cup coconut oil, softened

Mix together the walnuts, raisins, coconut flakes, flax seeds and sea salt. Blend up, together, until nicely ground up. (Use a blender or coffee grinder or food processor etc. to make this work.)

Place mixture in bowl. Stir in coconut oil. Flatten crust into bottom of a dish or pie pan.

Toppings:

1-2 Bananas, sliced
4-5 Kiwis, peeled and sliced
1 cup raspberries, fresh or thawed
1/4 cup coconut manna

Place sliced bananas on crust. Place sliced kiwis on top of bananas.

Mash raspberries, in a bowl, with a fork. Spread raspberries over kiwis.

Sprinkle coconut manna over the raspberry mush.

Cut, serve and enjoy!
