Recipe: Kale Chips

Once I start eating these I can't stop! Not just the adults in our home, but the children as well can't stop either. And we're eating kale! This recipe is derived from Robyn Openshaw's Cheesey Kale recipe. It's so good!

Here's the recipe:

Kale Chips

2 bunches of kale

1/3 cup hemp or sunflower seeds

2 Tbsp lemon juice

6 Tbsp water

1/4 cup E.V. olive oil

3/4 tsp sea salt

1/4 cup nutritional yeast

2 green onions

1/2 tsp chili powder

1/2 clove garlic

Blend all the ingredients in blender or with a hand held blender.

Cut leaves off of kale stems. (Save the stems, in the fridge, for smoothies).

Chop up kale leaves some.

Place leaves in large bowl and pour mixture over the top.

Stir until evenly mixed.

Place on mesh dehydrator sheets. Dehydrate at 110-115° for 6-8 hours or until nice and crisp.

*These chips are great just plain but they can even be placed on top of a cracker spread with cream cheese or sprinkled over a salad for extra flavor.
