Recipe: Bread Pancakes

Here's a great way to use older, crumbly bread ... in fact I used leftover bread that had been spread with jam and butter from the night before.

Here's the recipe:

Bread Pancakes

6 slices of bread
1/2 tsp baking powder
dash of salt
1 egg
1/4 to 1/2 cup milk
(or 4 tbsp yogurt mixed with enough water to equal 1/4 cup)
2 tbsp oil: coconut oil or grapeseed oil
1/2 tsp cinnamon
3 tbsp honey or sucanat
butter for frying

1. Mix together all of the ingredients.

2. Mash up until fairly liquidy. Some chunks are just fine. Use a little more milk / yogurt mixture to create a fairly liquid batter.

3. Heat pan on medium heat. If your pan needs buttering, butter the pan and make these flat cakes like you would pancakes.

4. We eat them plain but they can be spread with butter and jam or dipped, bite by bite, into maple syrup.

*These can also be shaped into bite sized pieces and taken along to places as a snack or munched on during the day.
