No sugar. All raw. "Mmmm! Scrumptious!" Were the vocal results.
Here's the recipe:
Almond-Raisin Truffles
(makes 16-18 servings)
(makes 16-18 servings)
1 1/2 cups sliced almonds
1 cup raisins
1/4 tsp cinnamon
1/2 tsp vanilla
dash of sea salt
(This recipe uses a food processor but I'm sure a blender could be used as well. If using a blender, doubling the recipe would make it easier to blend up.)
1. Chop up 1/2 cup of almonds in food processor until nicely ground.
2. Transfer chopped up almonds to a bowl and add the cinnamon.
3. Place the remaining ingredients into the processor. Process until the mixture forms a ball - about 3-4 minutes.
4. Hand roll the mixture into separate balls and roll in almond mixture.
***These truffles are pretty rich - it isn't possible to eat a lot of these in one sitting. But they're great as an on-the-go snack or a fun family treat!
They can be frozen and refrigerated for longer shelf life.
