Recipe: Fudge

I chanced upon a wonderful fudge recipe from the Passionate Homemaking website and found it to be a complete success!

It was such a perfect treat after eating some pesto pizza ...

Who knew that three simple "superfoods" combined - in a few easy steps - could make such a delightful melt-in-your-mouth treat? This treat is good anytime!

Here's the healthy fudge recipe:

Fudge

1 cup raw cocoa powder
1 cup coconut oil or butter
3/4 cup raw honey

Gently melt half of the coconut oil in a small saucepan. Allow to cool slightly. Place the remaining 1/2 cup solid coconut oil in your blender with the cocoa and honey. Carefully add the melted coconut oil and pulse a few times until smooth.

Make sure not to over blend or it can separate. Line a bread pan with a layer of parchment paper or saran wrap. Carefully pour the fudge into the pan. Place in fridge until solid (about one hour).

Gently remove from pan and cut into squares. Store in fridge until ready to serve.
