Recipe: Cottage Cheese-Flax Cheescake

So, going along with Dr. Budwig's theory concerning the health benefits that comes from eating flax oil mixed with a dairy protein I came up with my own little (very yummy) version of this mixture.

Here's the recipe:

Cottage Cheese-Flax Cheesecake
(one serving)


3-4 Tbsp's Cottage Cheese (either organic or home-made)
1 Tbsp flax oil
1/3 dropper full, Berry flavored Stevia liquid extract
8-10 raspberries (or blackberries)

crust:
1 1/2 tsp's coconut oil
1 Tbsp golden flax seed
3 Tbsp sliced almonds

Grind the almonds and then the flax seeds in a coffee grinder. Mix together in the bowl you'll be eating out of. Add melted coconut oil. Mix together and press down in bottom of bowl.

(I don't press this mixture up along the sides of the bowl - like the photo indicates - but simply press it into the bottom of the bowl.)

In a separate bowl, mix the cottage cheese and flax oil together either with a handheld mixer or with a fork. (Make sure these two are mixed together very well in order to get the benefits of it.)

Add stevia and raspberries to the cottage cheese mixture - by stirring around with a spoon. Spread this mixture on top of the "crust". And eat!

I eat it just like this although a few nuts and berries can be sprinkled on top.

I absolutely love eating this meal and look forward to eating it every day.
