Recipe: Sauerkraut Garlic Chicken

The health benefits of foods containing probiotics, such as sauerkraut, and the health benefits of the remarkable Flax seed and its oil are something I'm learning about and appreciating more and more.

So I came up with a recipe that I really enjoy.

Here it is:

Sauerkraut Garlic Chicken
(one serving)

Two chicken tenderloins
Sea Salt
One onion
2 cloves fresh garlic, minced
Unpasteurized sauerkraut (buy the kind that stores keep refrigerated)
Flax seed oil
Golden flax seeds, freshly ground

Slowly cook chicken in generous amount of butter, on low heat, with lid on. Flip chicken about 8 - 10 minutes into cooking time and cook 8 - 10 minutes more. Slice onions. Slowly, lightly brown onions in a generous amount of butter, until they become "caramelized". Lightly brown minced garlic by allowing the garlic to slightly simmer in left over butter from chicken. (Add more butter if necessary.)

Lay chicken down on plate and sprinkle with sea salt. Place cooked onions over chicken. Spread desired amount of sauerkraut over onions. Lightly pour flax seed oil over sauerkraut. Sprinkle flax seeds on top. Spoon garlic on top and that's it!

This meal is filled with so much goodness. Healthy fats. Protein. Nutrients. Probiotics. Enzymes ... and more, I'm sure.

This recipe is so pleasing to my taste buds and tastes great with a thick slice of home made artisan bread lavishly spread with butter or coconut oil.

*Some greens can be added too - by placing all the mentioned ingredients on top of a handful of spinach leaves.
