Here's the recipe:
Raw Chocolate Chip Cookies
(makes about 18 small cookies)

1 1/2 cups blanched, slivered almonds
3/4 cup finely shredded coconut
1/8 tsp sea salt
1 tsp vanilla
1 tsp raw honey
3-4 T. chocolate chips
1. Using a high powered blender, blend the almonds, coconut and salt until it pushes it up the sides. Scrape down, loosen up and blend again. Do this 4-5 times or until it gains a fairly smooth consistency. (It'll always be somewhat chunky though.)
2. Spoon the almond mixture into a bowl and stir in the vanilla and honey.
3. Stir in the chocolate chips.
4. Scoop the "dough" onto the counter or table top.
5. Press the dough down with your hands to compact the dough a bit. The dough needs to be about 1/2 of an inch thick.
6. Cut out with a cookie cutter and freeze!
7. Eat frozen.
These are super yummy and won't last long!
Note: A "non" high powered blender may work just as well too!
