Here's the recipe:
4 hormone free, cage free eggs
1/2 to 1 clove garlic
1 tsp dried basil
1 cup chopped zucchini
1 cup chopped red onion
1/2 cup chopped red pepper
Raw or organic butter
Fry vegetables in butter until all vegetables are tender. With a hand blender, whip together eggs, garlic and basil. Take out half of the vegetables for the second omelet. Pour half of the egg mixture over vegetables.
Cover with lid and allow to cook on low heat until the egg is almost cooked through. Flip omelet over, for 10 or so seconds. Remove omelet from pan onto plate.
Sprinkle with sea salt and pepper and it's done! (Makes enough for two full omelets.)
