Recipe: Gazpacho Soup

I've never tried a raw soup like this before and was extremely pleased with how flavorful it was.

This is a soup that wakes the senses and refreshes the body and is so easy to make.

Here's the recipe:

Gazpacho Soup

3 medium tomatoes, par-boiled and skinned
1/3 cucumber (peelings left on for extra nutrition)
1/3 red bell pepper
1 -2 tsp apple cider vinegar
1 Tbsp extra virgin olive oil
1/3 garlic clove
couple slices of an onion
1 slice of day old sprouted wheat bread (optional)
Lime juice from 1/2 or whole lime
Salt and pepper to taste

Place ingredients in blender and blend until smooth. Pour into a bowl.

Drizzle with a bit of olive oil and add a few chopped pieces of red pepper and cucumbers if desired.

This makes enough for one to two people.
