Recipe: Banana Bread

I've had some very brown bananas sitting in my fridge for a while now... I had angst about using them to make banana bread. The recipe called for 2! whole cups of white sugar so I substituted that amount of sugar with agave and coconut sugar instead and they turned out deliciously well.

Here's the recipe:

Banana Bread

5 large very ripe bananas
4 eggs well beaten
1/2 cup softened butter
1/2 cup raw agave
1/2 cup coconut sugar
4 cups sprouted wheat flour
2 tsp baking soda
1 tsp sea salt
1 cup nuts (optional)
1 cup (or less) Organic dark chocolate chips
1 1/2 tsp cinnamon

Beat bananas until liquid. Combine with eggs. Cream butter and sweeteners. Add creamed mixture to banana mixture. Add rest of ingredients and bake at 350 degrees for 12-14 minutes.

This recipe can be made into bread loaf sizes, cake sizes or cupcakes.

**I'll be using raw honey next time in place of white sugar ... this would make for an even healthier banana bread.
